This is a traditional Hawaiian plate lunch that is perfect for any occasion. It is very filling so the serving portion may be decreased for younger eaters. If you would like to make your own veggie patty you can do that; however, it is faster to use a store bought veggie patty. This meal is very high in protein so it is perfect for gaining muscle.
Serves 4
Fried Rice
1 Tablespoon of Vegetable Oil
1/2 of a Finely Chopped Onion
1 Clove of Finely Chopped Onion
4 Cups of cooked Rice
Gravy
2 Tablespoons of Butter or Vegetable oil
2 Tablespoons of Flour
2 Cups of Vegetable Broth
2 Teaspoons of Ketchup
1 Teaspoon of Hot Sauce
1/2 Teaspoon of Soy Sauce.
4 Veggie Patties
4 Eggs
- Fry the onions and garlic in a pan with the oil until it is translucent. If you want, you could fry them until they are brown and caramalized.
- Add in the cook rice and mix around in hot pan till the onion is evenly distributed around the rice and the rice is hot.
- In a different pan, start the gravy by mixing the butter or vegetable oil and flour together on medium heat until they smell nutty and have browned.
- Slowly stir in the vegetable broth and let boil until the mixture is thick. After it is the consistency that you desire (Remember that it will continue to thicken as it cools), add in the ketchup, hot sauce, and soy sauce.
- Cook the veggie patty by following the instructions on the package. Cook the eggs how you like them. Traditionally the eggs are sunny side up or over easy.
- To assemble the dish, put a cup of the fried rice on the plate. Add the patty, some of the gravy, and top it off with the egg. Garnish with chives if you want.
