Vegetarian Pot pie

This is a really wonderful dish that has many different flavors and textures. You can add whatever vegetables that you would like into the filling. If you want to use pre made biscuits for the topping then you can however the taste won’t be as fresh.

Makes 9 Servings

For the Topping

6 Tablespoons of Grated Butter

2 Cups of Flour

1/2 Teaspoon of Salt

2 1/2 Teaspoons of Baking Soda

3/4 Cup of Buttermilk, Thin Yogurt, or Milk

For the filling

3 Tablespoons of Oil

1/2 a chopped onion

3 chopped Spring Onions

1 minced clove of garlic

2 Chopped Carrots

1 Chopped Potato

3 Tablespoons of Flour

1 1/2 cups of vegetable broth

A pinch of dried thyme

Salt

Pepper

  1. Make the topping by mixing the grated butter with the dry ingredients. Then add in the liquid and mix until it form a dough. Refrigerate until you are ready to use it.
  2. Preheat oven to 475 degrees. Heat oil in a saucepan and add in both types of Onions and Garlic.  Cook until the onions are translucent.
  3. Add in the flour, stir well until there is no more dry flour. Add in the carrots and potato. Season with salt and pepper to taste. Also add in thyme.
  4. Add in the vegetable stock and stir in while heating until it thickens.
  5. Pour the filling into a oven safe casserole dish. Add the topping (That is separated into 9 even dough balls).
  6. Bake for about 11 minutes. It should be golden brown on top.
