DAY 2: BLUEBERRY OATMEAL PANCAKES, LEMON RICE, YOGURT, AND POTATO CHIPS

PREP TIME: 20 MINUTES

INGREDIENTS- 

Blueberry Oatmeal Pancakes

-1/2 Cup Oatmeal

-1/2 Cup Whole-Wheat Flour

-1 Cup Milk

-1 Large Egg

-1 Tablespoons Maple Syrup

-1/2 Cup Blueberries

Lemon Rice

-½ Inch Finely Chopped Ginger

-1 Cup of Uncooked Rice

-Pinch of Asafoetida

-4 Limes or 4 Lemons

-1 Tablespoon of Oil

-1 Green Chili 

-1 Teaspoon of Mustard Seeds and Cumin Seeds

-1/4 Cup Lentils

-Salt to taste

Yogurt

-1 Cup milk

-1 Teaspoon Yogurt

Chips

-1 Large Potato

-1/2 Teaspoon Salt

-1 Tablespoon Oil

 

1. The night before, boil the milk for 5 minutes and allow to cool until it is about 105 degrees Fahrenheit. It should feel just barely warm when you dip your finger into it. Add in the yogurt into the warm milk and gently mix. Add a lid onto the milk and stick it in a warm place (Like an oven with the light on) for 6-10 hours. It should be firm and taste a little bit sour. After this, store the yogurt in the fridge.

2. In a pot add the Asafoetida, mustard seeds, cumin seeds, and the oil. Once the seeds pop, add in the lentils, salt, and green chili. When the lentils have toasted, add in cooked rice and lemon or lime juice. Serve with yogurt

3.With a mandolin or knife, cut the potatoes into thin slices and toss with oil and salt. Place in one layer on a baking sheet and bake in a 350-Fahrenheit oven for 10 min or until golden brown. Garnish with lemon zest

4.For the pancakes, mix the egg, maple syrup, milk, and whole- wheat flour in a bowl until well mixed. Add in oatmeal to the batter. Cook batter on medium heat until browned at the bottom and put the blueberries on top while it is cooking. Then flip and cook until the other side is brown. Add fresh fruit or chocolate chips and serve.
