DAY 4: BANANA MUFFIN, SPICY FAJITAS, BERRY SALAD, AND YOGURT DIP

PREP TIME: 15 MINUTES

INGREDIENTS-

Banana Muffin

-1 Large Banana

-1 Tablespoon of Agave

-1 Tablespoon Oil

-1/4 Teaspoon Baking Soda

-2 Tablespoons Oats

-2 Tablespoons Flour

-2 Tablespoons of Walnuts

Spicy Fajitas

-1 Large Whole Wheat Tortilla

-1 Cup of Tofu

-1/2 Cup Broccoli

-1 Large Carrot Chopped

-1/2 Cup Spinach

-1 Tablespoon Sichuan Sauce

-1 Tablespoon Soy Sauce

-1 Tablespoon Agave

-1/4 Teaspoon Crushed Black Pepper

Berry Salad With Yogurt Dip

-1/4 Cup Blueberries

-1/4 Cup Blackberries

-1/4 Cup Raspberries

-1/2 Cup yogurt (See Day 2)

-1 Lime or Lemon

-1 Teaspoon Honey

1.Mash the banana in a mug and add in all of the other ingredients. After the batter has been thoroughly mixed, microwave for 45 seconds. Check and see if the top is lightly springy. If it is not, continue microwaving in 15 second intervals until it is.

2. Stir fry the broccoli, carrot, and tofu until lightly browned. Add in the sauces, agave, and pepper. Stir up and transfer to a plate. Lightly toast the tortilla on the pan for about 30 seconds. Add the tofu mix to the tortilla along with the spinach. Roll it up like a burrito.

3. Mix the citrus juice, yogurt, and honey and set aside. Place the berries in a container.
