INGREDIENTS-
EGG IN THE HOLES
-2 Eggs
-2 Slices of Whole Wheat Bread
-1 Teaspoon of Oil
-Salt and Pepper
Quinoa Salad
-1/2 Cup Uncooked Quinoa
-2 Cups of Vegetable Broth or Water
-1 Sweet Potato
-1/2 Cup Black Beans
-1/2 Cup Corn
-Salt and Pepper
Chocolate Pudding
-1 Ripe Avocado
-1 Tablespoons Cocoa Powder
-1 Tablespoon Agave
-1/2 Teaspoon Vanilla
-1/4 Teaspoon Salt
-1/2 Cup Chopped Strawberries
1.Chop the sweet potato in to 1/2 inch cubes and boil with the vegetable broth and quinoa for 15 minutes.
2.Meanwhile, cut a whole out of the middle of the bread and lightly toast all of the bread over a pan until barely golden brown. Remove the cut out circles of bread. In the pan, add the oil into the centre of the bread and crack the two eggs into the two pieces of bread. After about 1 minute, flip the eggs and cook for about 30 seconds or until the egg is somewhat firm to the touch. Add the salt and pepper.
3. Blend all of the ingredients for the pudding except for the strawberries until smooth. Top with the strawberries.
4. When the quinoa has completely absorbed the water, add in the salt and pepper. Top with warmed black beans and corn.
